Homemade Pimento Cheese Recipe

I get a lot of looks when I talk about how good pimento cheese is but that’s because I make my own and not eat the store bought kind. No offense if you do, to each is there own but I find it easier to just make a batch. The batch doesn’t last very long around this household.

When I was a kid I never really liked it because it just wasn’t my taste. My mom didn’t have time to make it homemade because she was looking after us driving us here, there, and everywhere. We didn’t have it often but when we did; I decided to go for the chips (one of my weaknesses).

I got this recipe from a coworker who brought some in one day with Ritz crackers for her lunch. I just so happen to be in her office (getting away from mine for a minute or two) and she pulled it out to eat it then offered me a bite. I was never the same again. I helped her eat most of it, it makes a ton!

The pimento cheese is great for sandwiches, on crackers, and with pretzels. My favorite is a sandwich with a side of pretzels though. The cheese gives the creaminess and the pretzels give the salty and the crunch, oh so good!

WHAT YOU NEED TO MAKE HOMEMADE PIMENTO CHEESE:

  • shredded cheddar cheese
  • mayonnaise
  • diced pimentos

HOW TO MAKE HOMEMADE PIMENTO CHEESE:

  1. Shred cheese (I used a good old fashion cheese grater for this method. I needed the arm workout anyway. It didn’t take very long but you could use a hand mixer.

2. Add the pimentos, I used the entire jar myself but you can do it to the taste of your preference.

3. I added the mayo to taste and mixed everything together.

4. I made myself a sandwich and enjoyed! You can also add onion powder, garlic powder, or dried mustard but I went for the plan southern style. You’ll notice there are no measurements for this recipe either. I just go with the flow, after everything I add I give it a little taste to see if it needs more. I try not to overdue it when I added the spices and I mix a little in a bowl before adding it to my sandwich.

There you have it, a quick and easy lunch/dinner that doesn’t only takes minutes to put together. I don’t know what it is but I can’t tell long stories in my recipe posts, I like getting to the point of the goodness and share with you guys.   2. I make a spicy pimento cheese (my husband is eating some now). I use 16 oz of Tillamook sharp cheddar shredded, 1/2 cup each of mayo and sour cream, two small jars of pimentos-drained, 1/2-1 tbsp of cayenne (depends on how spicy it is), 1/4 tsp each of paprika, garlic powder and onion powder. I use a hand mixer to mix it together. We like to eat it with sesame rice crackers.
